Marshmallow Caramel Corn

As easy as Rice Krispy treats and tastier than mall caramel corn (which has that weird burned undertone), this is one of my favorite gooey, sweet treats. I have to use two bowls and divide the ingredients in half to be able to stir it all, because it's a huge batch-- all the better for sharing!

Marshmallow Caramel Popcorn

INGREDIENTS:
 3 bags of microwave popcorn (I use butter flavor)
1 cup butter
1 cup packed brown sugar
1 whole 16-oz. bag of mini marshmallows

1. Pop the popcorn and remove the unpopped kernels. I do this by pouring it into a bowl, putting a cooling rack over the bowl and shaking it over the trash.
2. Microwave the marshmallows, butter and sugar for one minute, stir and microwave one more minute and stir well. If it's not smooth yet, you can microwave for 30 more seconds at a time, stirring between.

 3. Pour over popcorn, stir well, then either dump onto waxed paper or form into popcorn balls (which is made easier by coating your hands with shortening first).
